One Pot Pasta

I Don't Feel Like Cooking
Veggie-loaded one-pot pasta is a quick and easy dinner recipe.

Servings 6 servings

Ingredients
  

  • 1 pound linguini or spaghetti
  • cups water
  • 10 oz. cherry tomatoes halved
  • 4 cloves minced garlic
  • 1 teaspoon dried basil
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • 2 cups packed spinach
  • 1 tablespoon olive oil
  • 2 teaspoons lemon juice
  • ¼ cup parmesan

Instructions
 

  • Add pasta, water, tomatoes, garlic, basil, pepper and salt to a large pan (preferably a wide one that the pasta can lay flat in.)
  • Bring to a boil on high heat. Boil for 9-10 minutes, or until the pasta is tender (this may vary on type of pasta.) Add more water as needed.
  • Stir in spinach and cook until wilted.
  • Remove from heat and stir in olive oil, lemon juice, and parmesan.
